HOW TO MAKE HALLOWEEN RICE KRISPIE TREATS

These treats are perfect for making with kids. You only need crisped rice cereal, butter, and marshmallows for the base. I recommend mini marshmallows because they melt more evenly and give a consistently soft texture.

To give them a Halloween look, fold in a generous amount of seasonal sprinkles or add your favorite bite-sized candies.

For thick, bakery-style bars, use a 9×9-inch pan. If you prefer thinner squares, press the mixture into a 9×13-inch pan instead. Grease the pan and use a buttered spatula (or lightly buttered hands) to press the mixture in so it doesn’t stick.

STORING RICE KRISPIE TREATS

Rice Krispie treats are at their best the day they’re made, but stored in an airtight container they keep well for about 3 days. Remove excess air from bags to avoid sogginess from humidity.

If the treats become too firm, warm them for a few seconds in the microwave—be careful not to melt the frosting. You can also freeze individually wrapped treats (foil or wax paper) in a freezer-safe container for up to 3 months. Thaw at room temperature for at least an hour before serving.

Equipment

  • 9×9-inch Cake Pan

Ingredients

  • 6 tablespoons unsalted butter
  • 2 packages mini marshmallows (10 ounces each), divided use
  • 9 cups Rice Krispies cereal
  • 1/3 cup Halloween sprinkles
  • 1/2 cup unsalted butter (for buttercream), room temperature
  • 1 1/2 cups powdered sugar, sifted
  • 1 1/2 teaspoons pure vanilla extract
  • 1–3 teaspoons milk (for frosting)

Instructions

  • Line a 9×9-inch pan with parchment or foil and spray with nonstick spray.
  • In a large saucepan, melt 6 tablespoons butter over low heat. Set aside 1 1/2 cups marshmallows. Add the remaining marshmallows to the pan and stir until melted. Remove from heat.
  • Gradually add the Rice Krispies cereal, stirring until well coated. Fold in the reserved marshmallows and sprinkles.
  • Press the mixture firmly into the prepared pan using a buttered spatula or lightly buttered hands. Cool completely before frosting.

For the Buttercream

  • Beat 1/2 cup room-temperature butter on medium-high speed for about 5 minutes until creamy.
  • With the mixer on low, gradually add sifted powdered sugar and beat until combined.
  • Add vanilla and 1 teaspoon milk, mixing on low until incorporated.
  • Beat on high until the frosting is smooth and fluffy, about 4–5 minutes. If too thick, add milk 1 teaspoon at a time to reach desired consistency.
  • Spread or pipe the buttercream onto cooled cereal bars and top with additional sprinkles or candies.

Notes

Try decorating with mini candy corn, Reese’s Pieces, or other small candies for added color and texture.

For thinner treats, press the mixture into a 13×9-inch pan instead of a 9×9-inch pan.
