When planning a June cocktail, I wanted something fast that highlighted blueberries. While I sometimes make syrups and sauces for cocktails, like my Hot Apple Pie Bourbon Cocktail and Strawberry and Lime Vodka Collins, I don’t always plan ahead. This recipe is simple and relies mostly on fresh fruit rather than prepared components.

The only ingredient you really need to stock up on is blueberries, and they’re plentiful and affordable in summer. When fruit is in season and local, the flavor is noticeably better. Limes and rum are pantry staples for many, and mint is easy to grow—plant a single mint and you’ll likely have more than enough throughout the season.

Although the recipe below makes two drinks, it scales up easily for a pitcher. For a crowd, muddle the blueberries and mint, combine with rum, lime juice, and sweetener, then strain into a pitcher filled with ice and top with soda water. It’s a refreshingly simple option for cookouts or patio evenings.

Ingredients

  • 1/2 cup blueberries
  • 8-10 mint leaves
  • 1 oz agave syrup
  • 1 oz lime juice
  • 3 oz rum
  • 4 oz soda water, approximately
  • ice

Instructions

  • Pour the blueberries into a cocktail shaker. Using a muddler or the end of a wooden spoon, muddle until the berries are broken up and have released their juices.
  • Add the mint leaves and gently press them, giving a single twist to release the aroma without over-bruising the leaves.
  • Add agave syrup, lime juice, and rum. Shake well to combine and chill.
  • Strain the mixture into two glasses filled with ice and top with soda water to taste.
  • Stir gently and garnish with lime slices, extra blueberries, and mint leaves if desired.

Notes

If you don’t have agave syrup, you can make a quick simple syrup. Combine equal parts water and granulated sugar (for example, 1/4 cup water and 1/4 cup sugar), bring to a simmer until the sugar dissolves, then cool. Store any extra simple syrup in a sealed container in the refrigerator for up to two weeks.
