Still, that doesn’t stop me from firing up the oven and making comforting meals like this hummus-crusted chicken. A little imagination goes a long way.

Baked Hummus-Crusted Lemon Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1/2 cup hummus
  • 1 clove garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1/4 teaspoon red chili powder
  • 1 lemon

Instructions

  • Preheat the oven to 450°F (230°C). Lightly coat a baking sheet with nonstick spray and arrange the chicken breasts on the sheet.
  • In a small bowl, combine the hummus, minced garlic, smoked paprika, cumin, and red chili powder. Spoon the mixture over each chicken breast and spread to form an even layer. Squeeze half a lemon over each breast.
  • Bake for 25–30 minutes, or until the chicken is cooked through and the hummus crust is golden and slightly crisp.
  • Remove from the oven, let rest a few minutes, then serve with an extra squeeze of lemon if desired. Enjoy!
