Chewy Date Bars Recipe: Homemade Date Squares for Snacks

Ingredients

2 eggs
1/2 cup sugar
Pinch of salt
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 cup chopped dates
1/2 cup chopped nuts (walnuts or pecans recommended)
1 teaspoon vanilla extract

Method

Preheat the oven to 300°F (150°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper.

In a medium bowl, beat the eggs until blended. Stir in the sugar and a pinch of salt until combined. Add the flour and baking powder and mix just until incorporated. Fold in the chopped dates, nuts, and vanilla extract, taking care not to overmix.

Pour the batter into the prepared 8×8-inch pan and spread it evenly. Smooth the top with a spatula.

Bake on the middle rack for about 30 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs. Baking times can vary slightly by oven, so begin checking at the 25-minute mark.

Remove from the oven and allow the bars to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely. Once cooled, cut into squares and serve.
