Prepare the Squash

Cutting a large spaghetti squash is the most challenging step. Use a long, sharp knife and slice lengthwise down one side, then flip and repeat. Remove the stem, then scoop out the seeds and the stringy inner membrane with a large spoon. Drizzle olive oil over the cut surfaces and season with salt, pepper, and garlic powder—rub the seasoning in lightly.

How to Smoke Spaghetti Squash on the Traeger

Preheat your pellet smoker to 225°F. Place the squash on the grates, skin side down, and close the lid. Smoke the squash for about 2.5 to 4 hours depending on size—smaller squash will finish sooner. Check for fork tenderness; larger squash can take longer. If you need to speed things up, raise the smoker temperature toward the end to finish cooking.

Note: If you want the squash softer, cook it longer until it reaches the texture you prefer.

For the Smoked Cherry Tomatoes

Place cherry tomatoes in a small pan, drizzle with a bit of oil, and set them in the smoker about an hour after the squash goes on. They’ll blister and pick up a light smoky flavor. If the tomatoes finish before the squash, remove them and set aside until the squash is ready.

How to make smoked squash

When the squash is fork tender, remove it from the smoker. Use a fork to shred the flesh into spaghetti-like strands. Toss the strands with butter, grated Parmesan, red pepper flakes, and the smoked cherry tomatoes. Adjust salt and pepper to taste and serve warm.

Texture: Crunchy or Soft?
