Description

Ingredients

  • 2 to 4 eggs*
  • Greek Yogurt Ranch Dressing
  • 1 cup plain Greek yogurt (fat free or full fat)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons apple cider vinegar
  • 3 to 4 tablespoons filtered water
  • 1 teaspoon agave nectar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried dill (or 1/2 teaspoon fresh dill, chopped)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried chives (or 1/4 teaspoon fresh chives, chopped)
  • Buffalo chicken
  • 2 tablespoons olive oil
  • 2 chicken breasts
  • Salt, to taste
  • 1/2 cup hot sauce (Frank’s RedHot or your favorite)
  • 2 tablespoons butter
  • Salad
  • 2 to 3 hearts romaine lettuce, chopped
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • 2 to 3 ribs celery, sliced
  • Optional: Blue cheese, crumbled (or substitute shredded cheddar)

Instructions

  1. Boil the eggs: Place eggs in a small saucepan, cover with cold water, and bring to a boil. Remove from heat, cover, and let sit 10 minutes. Rinse with cold water, peel while warm, and refrigerate until ready. Eggs can be made up to one week ahead.
  2. Make the Greek yogurt ranch: Combine Greek yogurt, lemon zest, lemon juice, and apple cider vinegar in a blender or food processor. Add 1 tablespoon water at a time until the dressing is thick but pourable (3 to 4 tablespoons total). Blend in agave, salt, pepper, dill, garlic powder, onion powder, and chives just until incorporated. Refrigerate until use.
  3. Cook the chicken: Heat a medium nonstick skillet over medium heat. Season one side of the chicken with salt. Add oil to the hot pan, place chicken seasoned side down, and season the top. Cook 5 to 8 minutes per side until mostly cooked through (internal temperature about 155°F). Add hot sauce and butter to the pan and toss the chicken in the sauce for another minute or two. Remove when the internal temperature reaches 160°F and transfer to a cutting board to rest.
  4. Slice the chicken: Let the chicken rest 5 minutes, then slice into bite-sized pieces. Spoon any pan sauce over the sliced chicken if desired.
  5. Assemble the salad: Prep the vegetables and slice the hard‑boiled eggs. Divide chopped romaine among bowls or place in a large serving bowl. Toss the romaine with some of the ranch until lightly coated. Top with celery, red onion, bell pepper, sliced eggs, and crumbled blue cheese.
  6. Finish: Add the sliced buffalo chicken to the salad and serve with extra ranch on the side. Serve immediately.
  7. Store leftovers: Keep leftover vegetables separate from dressing, and store chicken in its own container. Veggies without dressing will keep up to 1 day. Reheat chicken or enjoy it cold.

Notes

Hard boiled eggs: Make up to one week in advance, peeled and refrigerated. If eggs are ready, total prep time is shorter.

Bacon would be a tasty addition if you like.

Greek Yogurt Ranch Dressing: You may have leftover dressing—it’s great on other salads. Flavor deepens after refrigerating 24 hours.
