Ingredients

  • 1 pound shrimp (31–40 count), thawed and peeled
  • 2 medium zucchini, spiralized (medium setting)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 6 tablespoons Thai sweet chili sauce
  • Juice of 1/2 lime
  • 1 tablespoon cilantro, chopped
  • Salt and pepper, to taste
  • Sesame seeds, for garnish (optional)

Instructions

  • Spiralize the zucchini and set aside.
  • Heat the olive oil in a skillet over medium-high heat. Add the shrimp and cook for about 2 minutes, stirring frequently.
  • Add the minced garlic, Thai sweet chili sauce, lime juice, and chopped cilantro. Cook for another 3 minutes, or until the shrimp are fully cooked and the sauce is warmed through.
  • Add the zucchini noodles and toss constantly for 1–2 minutes, just until they are slightly warmed and tender. Season with salt and pepper to taste and garnish with sesame seeds if desired. Serve immediately.

Notes

  • This dish yields a flavorful sauce; cooking the zucchini longer will release more water and thin the sauce. For firmer zoodles, warm them briefly only.
  • If you use a spiralizer, choose one that produces medium-thickness noodles for the best texture.
