- ⅔ cup creamy peanut butter
- 1 cup old fashioned rolled oats or quick oats (for smoother texture) plus extra for rolling
- 1 ½ TBSP honey
- ⅛ tsp vanilla
- ¼ cup mini chocolate chips plus extra for rolling
- ¼-⅓ cup ground flax seed

Mix all ingredients in a bowl until well combined.

Cover and chill in the refrigerator for 20–30 minutes.

Roll into approximately 12 bite-sized balls. To prevent sticking, coat your hands lightly with coconut or avocado oil before rolling. Squeezing the mixture before shaping helps too.

Place extra oats and chocolate chips (or shredded coconut) on a cutting board and roll the balls in the mixture to coat. Roll again briefly so the toppings set.
