Our Bourbon Peach Cocktail is a bright, fruity low‑carb summer drink that’s simple to make and very refreshing. It’s inspired by the “smash” cocktail method — flavors are combined to create a muddled-style profile — and we finish it with fizzy club soda. You can substitute diet ginger ale or diet ginger beer if you prefer a spicier ginger note; both are common in smash-style drinks. Remember, “smash” describes the preparation technique, not the number of cocktails you should enjoy!

Instead of muddling fresh peaches and mint, our version uses Torani Sugar Free Peach Syrup and just a drop of mint extract for a clean, peach-forward flavor with a hint of mint julep character. The mint extract preserves the low carb profile; fresh peaches will add natural sugars and carbs, so choose according to your plan. If you like, you can substitute fresh mint and muddled peaches for a more rustic smash — the technique is up to you.

Ingredients
The essential base is a good Kentucky bourbon — zero carbs and full of character. We like Knob Creek, but use any bourbon you prefer. Bourbon pairs beautifully with peach flavor, and a single drop of spearmint extract gives a subtle mint julep-like note. Be very sparing with mint extract; a single dropper (one drop per drink) is plenty. The recipe below makes two servings.

For the peach flavor we recommend a sugar‑free syrup to keep carbs minimal. Torani sugar‑free syrups provide vibrant flavor and color without carbs; they’re sweetened with sucralose and work well in keto cocktails. You can also explore water enhancers or other zero‑calorie peach flavors if you prefer.
If you want fresh mint flavor without muddling each drink, you can infuse bourbon with mint leaves. Place 6 fresh mint leaves in 6 ounces of bourbon in a sealed jar and refrigerate for several hours (or up to overnight) to infuse, then strain. Or simply add one drop of spearmint extract to the shaker for convenience. Use spearmint, not peppermint, and start with very little — too much will dominate the drink. An eye dropper is helpful for precise dosing. If you prefer no mint, the cocktail will still be delicious.
Preparation Tips
This recipe calls for a sugar‑free “simple syrup.” To make a low‑carb version, substitute allulose for sugar. Combine 1 1/4 cups allulose with 1 cup distilled water, bring to a simmer until dissolved, then whisk in 1/8 teaspoon xanthan gum to thicken slightly and cook one more minute. Cool and store in a jar. This yields a syrup that blends smoothly into cold cocktails without added carbs.

This cocktail is light, bubbly, and very refreshing. The peach syrup gives a clear peach note while the club soda creates a spritzer-like finish. The spearmint extract is subtle and complements the bourbon’s warmth; if you prefer a muddled smash with fresh peaches and mint, that variation is delightful but will increase the carb count.
