Green Chili Chicken Burgers

These green chili chicken burgers are flavorful and simple to make. Serve them wrapped in lettuce with guacamole, pickled red onions, jalapeños and fresh cilantro for a light, Whole30-friendly meal adapted from a Martha Stewart recipe.

Ingredients

  • 2 tablespoons avocado oil
  • 1 pound ground chicken breast or thigh meat
  • 1 teaspoon ground cumin
  • 2 cans 4 oz. diced green chiles, drained
  • 1 cup cilantro leaves chopped
  • Coarse salt
  • Ground pepper

Instructions

  • In a mixing bowl, combine the ground chicken, ground cumin, drained diced green chiles, chopped cilantro, and ½ teaspoon coarse salt. Mix gently until just combined, then shape the mixture into 4–5 even patties.
  • Heat the avocado oil in a large sauté pan over medium heat. Add the patties to the pan without crowding; leave space between them and cook in batches if needed. Sear each side until golden brown, about 4–5 minutes per side. Season with freshly ground pepper while cooking.
  • Continue cooking until the internal temperature of the thickest part of a patty reaches 165°F (74°C). Remove from the pan and let rest briefly before serving.
