A simple Pistachio Salad recipe that is perfect for any occasion! Smooth, creamy, and easy to make, the green color makes this pistachio salad perfect for St. Patrick’s Day, Easter, and Christmas.
Pistachio salad was a holiday staple in my childhood home. Its bright green color and creamy texture made it an easy favorite for Christmas, Easter, and St. Patrick’s Day, and it was one of my mom’s go-to quick dishes.
Even now, years later, this pistachio salad remains a holiday tradition at my parents’ house and has become a regular on my family’s table. It’s reliably easy to make and always well received.
The vivid green color is fun for themed celebrations like St. Patrick’s Day, and for Easter we like to add pastel multi-colored marshmallows for a festive look and extra texture that kids love.
You can serve this pistachio salad plain, or dress it up with a dollop of whipped cream, a sprinkle of chopped pistachios, and a maraschino cherry for a classic presentation.
This recipe scales easily — double or triple the ingredients when you’re feeding a crowd. It’s a great side or dessert to bring to potlucks, family gatherings, and holiday meals, and both kids and adults tend to enjoy it.
This pistachio salad is so simple my five-year-old made it recently for family night. It only takes a few minutes to prepare and a short chill to set. Ideally chill it a few hours or make it the day before, then add any toppings right before serving.
