
Dominican Republic Green Salad is a simple, everyday salad that makes a fresh, healthy accompaniment to any meal. I’m preparing to travel to the Dominican Republic on a mission trip with 50 people from my church, including the twins and my youngest son. This is my first mission trip and my first time visiting the Dominican Republic, so I expect it to be an eye-opening experience.

Our church, Grace Community Church, is partnering with Foundation for Peace to organize this trip. We will be serving in a small village, helping with construction projects and teaching vacation Bible school to local children.
Serving on this mission trip will be a humbling experience. We often take basics for granted — running water, electricity, hot water, air conditioning, easy access to clean water and food, and reliable internet. The minor inconveniences we encounter will likely pale in comparison to the daily needs of the people we will serve.
Leaders have reminded us that the purpose of this trip is not about us but about serving others and letting God’s light shine through our actions, words, and attitudes. I look forward to working alongside fellow volunteers and local Dominican community members, making small but meaningful contributions, and learning about Dominican culture and customs.

I made this Dominican Republic Green Salad for our final gathering two days before departure. While I’m not an expert in Dominican cuisine, my research showed that simple green salads are served frequently there. This salad is similar to those you’ll find served alongside many meals in the Dominican Republic.

At first glance this salad resembles a typical American green salad, but two elements stood out: the inclusion of corn and the onion-marinated dressing. Corn appears often in Dominican dishes—even as a pizza topping—so its presence here adds both flavor and texture. The dressing, made by marinating onion in vinegar and oil, gives the salad a bright, tangy note.

Instructions
Dominican Salad Dressing

In a medium bowl, combine the chopped onion, vinegar, olive oil, and salt to taste. Let the mixture sit for about 1 1/2 hours so the flavors meld while you prepare the salad.

Place the romaine, cabbage, cucumber, tomatoes, avocados, and cooked corn in a large bowl. Toss with the dressing just before serving. Add cooked beets if desired for color and extra flavor.
