I’m at my happiest when I’m standing at a grill with coals stoked and a hearty piece of protein sizzling, but making a great sandwich brings me nearly as much joy. In fact, I created an entire category on my blog dedicated to sandwiches, and this spicy salami and roasted tomato sandwich is the recipe that inspired it. I could eat this one several times a week.
This sandwich will make even fans of expensive deli sandwiches reconsider their orders. It all starts with the bread: ciabatta is my pick here. It has enough chew to support the fillings while offering a subtle savory note that pairs beautifully with sweet roasted tomatoes and creamy, buttery brie.

A great ciabatta loaf can be hard to find at the supermarket, so check local bakeries for a fresh artisan loaf. The right bread should complement the sandwich without overpowering it—ciabatta is sturdy and mild, ideal for the flavors in this sando.
Flavor-wise, every element plays off the others: the heat of the salami contrasts with the sweetness of roasted tomatoes, while earthy brie balances the peppery bite of arugula. Avoid using a strongly flavored bread like sourdough here; that intensity would compete with the other ingredients rather than harmonize with them.

Spicy Salami and Roasted Tomato Sandwich
Serves: 2–4 | Prep Time: 5 minutes | Cook Time: 7–10 minutes
Ingredients
1 loaf fresh ciabatta bread
16 oz brie cheese
8 oz spicy salami, sliced
1 cup roasted tomatoes
1 cup arugula, roughly chopped
How to Make This Hot Salami Sandwich
Step 1: Preheat the oven to 350°F.
Step 2: While the oven preheats, cut the ciabatta into 6-inch sections and then slice each section in half horizontally.
Step 3: Prepare thin slices of salami and set aside.

Step 4: Spread half of the brie over the bottom halves of the bread.

Step 5: Layer the salami and roasted tomatoes over the brie, then place the assembled bottoms on a baking dish.

Step 6: Place the top halves of the bread, cut side up, on the baking sheet and cover them with the remaining brie. Bake in the preheated oven for 7–10 minutes until the brie is gooey and slightly melted.
TIP: Covering both the top and bottom with brie ensures the sandwich is evenly gooey and rich.
Step 7: While the sandwich bakes, roughly chop the arugula.
Step 8: Remove the baking dish from the oven and transfer the sandwich to a cutting board using a turner.
Step 9: Spread the chopped arugula on the bottom halves, close the sandwiches with the remaining bread, then slice diagonally to serve.
