Ingredients

  • 1 ½ cup whole wheat flour
  • ¼ teaspoon Himalayan salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons Ceylon cinnamon
  • 4 tablespoons raw cocoa
  • 1 ripe banana
  • ½ cup milk (plant-based or fat-free cow’s milk)
  • 2 egg whites
  • 2 tablespoons extra virgin coconut oil (melted and cooled)
  • 4 tablespoons date syrup (or honey)
  • ½ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • Raw cocoa beans or chia seeds for topping

Chocolate glaze (melted dark chocolate)

  • ½ cup dark chocolate (70% cocoa or higher)
  • 2–3 tablespoons milk (plant-based or fat-free cow’s milk)

Chocolate glaze (raw cocoa version)

  • 4 tablespoons extra virgin coconut oil (melted and cooled)
  • 4 tablespoons raw cocoa
  • 2 tablespoons date syrup (or honey)

Instructions

  1. Preheat oven to 350°F (180°C). Grease a donut pan.
  2. In a large bowl, whisk together the dry ingredients: whole wheat flour, salt, baking powder, baking soda, cinnamon and raw cocoa.
  3. In a blender, combine the banana and milk and blend until smooth.
  4. In a separate bowl, whisk the egg whites. Add melted coconut oil, date syrup (or honey), Greek yogurt and vanilla. Stir in the blended banana mixture.
  5. Add the dry ingredients to the wet mixture and mix until combined.
  6. Fill the donut pan using a piping bag or a plastic bag with the corner snipped. Avoid overfilling.
  7. Bake for 14–17 minutes. Allow the donuts to cool in the pan for about 5 minutes, then remove and cool completely.
  8. Dip each donut into the chocolate glaze and sprinkle with crushed raw cocoa beans or chia seeds.

Chocolate glaze

To make the dark chocolate glaze, melt the dark chocolate over low heat in a saucepan, stirring in milk until smooth. If too thick, add a bit more milk. Alternatively, for a raw cocoa glaze, melt the coconut oil, then whisk in raw cocoa and date syrup (or honey) until smooth. Adjust thickness by adding more cocoa or oil as needed.

Notes

Store in an airtight container for up to 3 days. Measurements use a US cup (240 ml).
