Chrysanthemum Buttercream Flowers on Textured Frosting Tutorial

Why we Love It

This refined fall cake has many appealing qualities. A few highlights:

Materials

In the video we frosted 8″ and 6″ tiers using a fluffy vanilla buttercream tinted with a touch of Americolor Ivory. Our Classic Vanilla Buttercream is another excellent choice and contains no shortening.

Each tier rests on its own cardboard cake circle trimmed to the cake size, and the top tier is supported from beneath by four bubble tea straws for stability.

Piping Tips for Buttercream Chrysanthemums

U-shaped petal tips work best for piping chrysanthemum petals. In the tutorial we demonstrate three different brands and sizes to show how each creates slightly different textures.

We used a Wilton 81 (smallest of the u-shaped tips), a Bakery Crafts 79, and an Ateco 80.

For flower centers we used a round tip (Wilton 10) to pipe a small dot; smaller round tips also work well. For tiny accent dots added at the end we used a Wilton 2.

Coloring Gels

Color choices in the video include Americolor Tulip Red for red and coral blooms, Americolor Egg Yellow for yellow flowers, and Americolor Ivory to tint the base buttercream.

Spatula for texture

The diagonal impressions shown in the video can be made with a variety of tools. We used a small tapered offset spatula (Wilton) to create the angled texture after smoothing the sides with a bench scraper.

This approach shares similarities with our ridged buttercream technique, which produces a lovely, tactile finish on cakes.
