Weekly Dinner Menu 181: Mango Salad, Ham Pasta & More Ideas

Hello! I’ve been staying in the country for a few days with the kids while my husband works in San Francisco. If you’re new to the story, we bought a house way out in the country to give me a break from city life now and then. I don’t love being apart from Matt, but with the kids out of school I wanted to make the most of our mountain retreat. I genuinely love being here.

My dinner habits change in funny ways when I’m here without him. Usually our dinners together are the best part of my day and I look forward to quiet evenings with him. When I’m alone at night I get unsure of what to do. If I don’t eat with the kids, I end up cobbling together odd meals instead of making a proper dinner. One night I mixed tuna salad with Italian dressing and sour cream simply because those were the ingredients I could find. Another night I ate a burger I’d grilled earlier, using corn tortillas for a bun—no fries, no salad—just a sad, flat burger that still tasted surprisingly good. I’m glad I’m not single full-time, or I’d probably eat like that all the time.

Right now I’m sipping red wine and munching microwave popcorn while I write this. Not my proudest meal choice. If you’re single and reading, tell me how you eat: do you cook from these recipes often, or do you rely on sandwiches or quick fixes most nights? Matt and I moved in together when I was 19 and married soon after my 20th birthday, so living alone as an adult feels foreign to me except for these occasional nights in the country. I’m never quite sure what to do with myself.

Luckily Matt comes back tomorrow and we’ll have a nice dinner together. Maybe I’ll make one of the easy recipes I’ve put together for this week’s menu. I hope you find plenty of simple, tasty meals here to try. Let’s get to the recipes!
