Apple Prosciutto Spinach Salads is a wonderful fall salad that comes together quickly with a simple homemade dressing.
Crispy prosciutto adds a delightful crunch — cook it on a Blackstone E-series indoor griddle or in a skillet on the stove.

How to make Apple Prosciutto Spinach Salads
Heat a skillet over medium or set an indoor griddle to 400°F. Lay the prosciutto slices on the hot surface and let them cook until crisp, flipping after a few minutes.
While the prosciutto crisps, whisk together the dressing: olive oil, balsamic vinegar, honey, Dijon mustard, kosher salt, pepper, and Italian or Tuscan herb seasoning.

Whisk until the ingredients are well combined and smooth — you’ll have a tangy-sweet balsamic vinaigrette that pairs perfectly with the apples and goat cheese.

When the prosciutto is crisp, remove it from the heat and place it on paper towels to drain and crisp up further as it cools. Divide fresh spinach between two bowls.
Dice a Honeycrisp apple and sprinkle it over the spinach. Add crumbled goat cheese to each bowl for a creamy contrast to the crisp prosciutto and crunchy apple.

Break the cooled prosciutto into bite-sized pieces and scatter them over the salads. Finish by drizzling the homemade balsamic vinaigrette on top and serve immediately.

Ingredients
- 3 ounces sliced prosciutto
- 2 tablespoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1/2 tablespoon honey
- kosher salt, pepper, Italian seasoning
- 4 to 6 cups fresh spinach
- 1 Honeycrisp apple diced
- 2 ounces crumbled goat cheese
Instructions

Set a large skillet or Blackstone griddle (indoor or outdoor) to medium heat. Place the slices of prosciutto and cook 4 to 6 minutes, flipping a few times. Remove once crisp and place on a plate lined with paper towels to cool.

Put the olive oil, balsamic vinegar, Dijon mustard, honey, kosher salt, pepper, and Italian seasoning in a bowl. Whisk until combined.

Divide the spinach between two plates or bowls. Break apart the crispy prosciutto over top and add the apples, goat cheese, and dressing.
