Healthy Chicken & Broccoli Pasta, slimming style
Here’s a simple, healthy recipe for Healthy Chicken & Broccoli Pasta — a slimming-style, family-friendly dish that’s quick enough for a busy weeknight.
I aim to add tasty, slimming-style dishes to my collection so meals don’t get boring. Variety helps you stick to healthy eating, and this pasta is a great, easy option to rotate into your week.

This recipe is straightforward: garlic, sliced chicken breast, and broccoli florets fried together with Fry Light. Mushrooms are added shortly after, and everything is cooked until the chicken is golden and the veg is tender.

When the chicken and vegetables are ready, add a little reserved pasta water, a chicken stock pot and light cheese triangles to create a creamy sauce. Finish with grated Parmesan, toss through the cooked pasta and serve.

Pasta Choice
I used extra-small fusilli, but any pasta shape will work — penne is a great alternative. Choose wholewheat or lower-calorie pasta if you prefer.
Broccoli nutrition
Broccoli is a nutritious vegetable rich in vitamins K and C, a good source of folate and potassium, and a valuable source of dietary fibre. Vitamin C supports collagen production and wound healing, so it’s worth including broccoli regularly.
How To Serve Healthy Chicken & Broccoli Pasta
I served mine on its own with a side of cherry tomatoes, but it also pairs well with sweetcorn, a simple salad, or a portion of low-calorie garlic bread. Leftovers are delicious cold, making this recipe ideal for packed lunches.

The Deets for Healthy Chicken & Broccoli Pasta
This dish is largely free on slimming plans except for:
- 4 light cheese triangles
- 10 g Parmesan
The recipe serves two. Per portion this roughly equates to half a Healthy A and half a Syn in the Slimming World system. Enjoy a quick, tasty dinner that’s satisfying and simple to prepare.

Healthy Chicken & Broccoli Pasta

Ingredients
- Fry Light
- 1 Clove Garlic, peeled and finely chopped
- 2 Skinless chicken breast fillets, cut into 2cm x 4cm strips
- 200 g Broccoli florets
- 6–8 mushrooms, washed & sliced
- 100 g Dried pasta (I used small fusilli)
- 4 tbsp Pasta cooking water
- 1 Knorr chicken stock pot
- 4 Light cheese triangles
- 10 g Grated Parmesan cheese
- Salt & pepper to taste
Instructions

Spray a large frying pan with Fry Light and heat over medium-high.

Add the garlic, chicken pieces and broccoli florets. Fry for about 5 minutes, stirring often.

Add the sliced mushrooms and fry for a further 10 minutes until the chicken is cooked through and lightly golden.

Meanwhile, cook the pasta according to the packet instructions, reserving 4 tablespoons of the cooking water.

Stir the reserved pasta water into the pan, then add the chicken stock pot and the light cheese triangles. Use the back of a spoon to blend into a creamy sauce.

Drain the pasta and add it to the frying pan. Mix well.

Stir in the grated Parmesan until combined, taste and season with salt and pepper if needed.

Serve immediately in warm bowls.
