Chocolate chip cookie pie takes the best parts of chocolate chip cookies and turns them into a rich, decadent dessert that’s easy to prepare.

Picture the warm center of a freshly baked chocolate chip cookie: tender, buttery, and just gooey enough that the chocolate is still melting. Chocolate chip cookie pie captures that experience on a larger scale. It’s essentially a giant cookie baked in a pie crust, delivering soft, sweet layers and pools of melted chocolate with every slice.

This recipe is one of the simplest pies you can make, which makes it ideal for beginner bakers and anyone who wants a dramatic dessert without fuss. The ingredient list is short and the steps are straightforward. When it first comes from the oven it may look plain — a golden tan top with a few bubbling spots and little sign of chocolate — but once it’s sliced the layers are revealed.

The top becomes a soft, buttery cookie layer; underneath, the chocolate chips melt into a lavish, fudgy layer; and the whole filling rests in a tender pie crust. Serve warm with vanilla ice cream, whipped cream, or a drizzle of chocolate sauce for maximum applause.

Ingredients
- 2 large eggs
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 stick butter (softened to room temperature)
- 1 teaspoon vanilla extract
- 1/2 cup all purpose unbleached flour
- 1 cup mini chocolate chips
- 1 recipe pie crust
Instructions
-
Preheat the oven to 350°F (175°C).
-
Prepare and flute a pie crust in a 9-inch pie plate.
-
In a medium bowl, beat the eggs until light and foamy. Add the white and brown sugars and the vanilla, then beat until combined. Add the softened butter and continue beating until the mixture is smooth and lump-free.
-
Add the flour and mix on low just until incorporated. Fold in the mini chocolate chips by hand, then spoon the filling into the prepared pie crust.
-
Reduce oven temperature to 325°F (160°C) and bake for 60–65 minutes, or until the top is golden brown and set. Allow the pie to cool slightly before slicing so the filling settles.
