Cosmic Brownies

Ingredients:
For the brownies:
- 1 cup granulated sugar
- 2/3 cup brown sugar
- 1 1/2 sticks butter, melted
- 2 tablespoons water
- 2 large eggs
- 2 teaspoons vanilla
- 1 1/3 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the ganache:
- 1/2 cup heavy cream
- 7 oz bittersweet chocolate, chopped
- Pinch of salt
- Sprinkles for decoration
Preparation:
For the brownies: Preheat the oven to 350°F (175°C). Line a 13 x 9-inch pan with parchment paper or aluminum foil and lightly grease it. In a large bowl, whisk together the granulated sugar, brown sugar, melted butter and water. Beat in the eggs and vanilla until smooth.
In a separate bowl, stir together the flour, cocoa, baking powder and salt. Fold the dry ingredients into the wet mixture until just combined. Spread the batter evenly into the prepared pan using a rubber spatula.
Bake for about 18 minutes. The goal is a dense, fudgy center—don’t overbake. Remove from the oven and transfer the pan to a cooling rack. Allow the brownies to cool almost completely before adding the ganache.
For the ganache: Place the chopped chocolate in a heatproof bowl. In a small saucepan, warm the heavy cream just until tiny bubbles form at the edges—do not let it boil. Pour the hot cream over the chocolate, add a pinch of salt, and let sit for a minute. Gently stir until the chocolate is fully melted and the mixture is smooth. Let the ganache cool slightly so it’s thick but still pourable.
Pour the ganache over the cooled brownies and spread it into an even layer. Immediately add sprinkles to your liking. Allow the ganache to set completely at room temperature, or chill briefly to speed the process.
Once the topping is firm, lift the brownies out using the parchment or foil and cut into small squares to serve.
