What Is Gravy Master?

Gravy Master is a browning and seasoning liquid often used to add depth and a rich color to gravies, soups, and sauces. It’s a pantry staple for many cooks who prepare comfort food because it enhances savory dishes with a deeper, more complex flavor.

If you prefer not to use Gravy Master, Kitchen Bouquet is a similar product, and soy sauce can be used as a substitute in a pinch. Use whichever option fits your pantry and dietary preferences — each will contribute a slightly different flavor profile but still deliver a satisfying result.

Thickness Matters

Thickness of the pork chop affects cook time and final texture. This recipe uses boneless chops about an inch thick, which hold up well during baking and stay moist while absorbing the onion gravy. If you use thinner chops, reduce baking time to avoid drying them out. Thicker chops will need additional time in the oven.

Adjust bake time based on the size of your chops and use a meat thermometer if you want to be precise — pork is safe at 145°F (63°C) followed by a short rest.

Cheese Please

Slices of provolone or a similar melting cheese are placed on the chops before baking so they melt into the gravy and add a creamy, savory layer. If you prefer the cheese to stay more intact on top of the chops, add it during the last few minutes of baking so it melts but remains visible.

Melting the cheese into the gravy creates a richer sauce — a delicious variation if you like a creamier finish.

The BEST Mashed Potatoes

These pork chops pair beautifully with mashed potatoes, noodles, or rice. The gravy is excellent over creamy mashed potatoes, which soak up every bit of sauce.

If you want a reliable mashed potato method, look for recipes that emphasize steaming or ricing the potatoes, warming the dairy before adding, and mashing just until smooth — these steps keep the texture silky and rich. Store-bought varieties also work well when you need a quick side.

Crock Pot? Sure!

This dish adapts well to a slow cooker. Sear the chops and sauté the onions first, then combine everything in the crock pot and cook on low for about 6 hours. Add the cheese during the last hour so it melts onto the chops, or add it at the beginning if that’s more convenient — both methods work.

Slow cooking yields tender meat and concentrates the flavors in the gravy, making it an easy weeknight or busy-day solution.

Seasoning The Chops

Seasoning is flexible and can be adjusted to taste. A light sprinkle of salt, pepper, garlic powder, onion powder, and a touch of chili powder works well. Since canned soups and broth contribute salt, taste as you go and be cautious with added salt.

Season the chops on both sides before searing, then adjust the overall seasoning after the gravy has simmered if needed.

Canned Soup For Cooking

Canned soups like French onion and cream of mushroom simplify this recipe and create a dependable gravy base. If sodium is a concern, choose lower-sodium versions or substitute with homemade broth and seasoning. These products help achieve consistent flavor with minimal effort.

Some people raise concerns about MSG. Many processed foods contain naturally occurring glutamates from ingredients like yeast extracts, but if you avoid those components, check labels and choose alternatives that match your dietary needs.

  • 1 medium yellow onion, sliced
  • 1 tablespoon Gravy Master or substitute soy sauce
  • 1 cup chicken broth
  • 1 can French onion soup
  • 1 can cream of mushroom soup

  • Salt, black pepper, garlic powder, onion powder, chili powder (about 1/2 teaspoon each, adjust to taste)

Instructions

  1. Pat pork chops dry with paper towels and lightly season both sides with salt, pepper, garlic powder, onion powder, and chili powder.
  2. Melt 2 tablespoons butter in a skillet over medium-high heat. Brown chops on both sides, then remove and set aside.
