The texture is rich and fudgy, yet these treats are low calorie, gluten-free, refined sugar–free, vegan, and packed with protein.

They make a convenient lunchbox addition or an after-school snack — and it’s hard to stop at just one.

Ingredients for the chocolate snack bites

This recipe uses black beans, cocoa powder or chocolate protein powder, pure vanilla extract, coconut oil or nut butter, a pinch of salt, and a sweetener such as pure maple syrup.

Unlike many similar snacks, these bites contain no dates, butter, corn syrup, powdered sugar, or heavy cream to achieve their fudgy texture.

If you want to experiment, you could try different beans, but results may vary — we haven’t tested substitutions like chickpeas or lentils.

Use any nut or seed butter you prefer: peanut, almond, cashew, hazelnut, or coconut butter work well. For a nut-free version, choose sunflower butter or rely on coconut oil.

To create double chocolate bites, use a chocolate spread like homemade Nutella, chocolate peanut butter, or macadamia butter. Add flavor by stirring in peppermint extract for mint bites or a few drops of almond extract plus a pinch of instant coffee for mocha notes.

Finish the balls by dipping them in melted chocolate, or roll them in powdered coconut sugar, chopped toasted nuts, chia seeds, or shredded coconut for chocolate coconut balls.

Black beans are high in fiber and protein and contain vitamins, antioxidants, and minerals such as iron, magnesium, potassium, folate, and zinc. They’re also cholesterol-free.

Nut butters add healthy fats and extra protein, while cocoa powder contributes antioxidants and a rich chocolate flavor.

How to make healthy chocolate snack balls

1. Drain and rinse the black beans thoroughly to remove excess salt and any beany flavor.

2. Add the beans and the remaining ingredients to a high-quality food processor. A blender can work, but a food processor yields a smoother, better texture.

3. Process until the mixture is completely smooth and fudgy.

4. Scoop the mixture with a spoon or mini cookie scoop and roll into truffle-shaped balls. Place them on a parchment-lined plate.

5. Refrigerate or freeze until firm. If you want a chocolate coating, prepare it while the balls chill.

To coat the bites in chocolate, melt about six ounces of chocolate chips (or white chocolate chips) in a microwave in short bursts or use a double boiler. Stir in one to two teaspoons of vegetable or coconut oil for a smoother coating, then dip each ball and place it on parchment to set.

An alternative no-chocolate-chip coating mixes three tablespoons each of pure maple syrup, cocoa powder (or raw cacao), and warm coconut oil; dip the balls, then chill until the coating firms.

Storage tips

These snack balls travel well and are popular for gatherings. They’re fine at room temperature for a few hours in a cool environment, but avoid leaving them in hot settings where a chocolate shell could melt.

Store leftovers in a covered container in the refrigerator for up to five days, or freeze in an airtight container for up to two months.

Ingredients

  • 1 can black beans (or 1 1/2 cups cooked)
  • 1/4 cup cocoa powder or chocolate protein powder
  • 3 tbsp coconut oil or nut butter
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup (or make keto No Bake Brownie Bites)
  • Optional: 1/4 tsp pure peppermint extract or a pinch instant coffee
  • Optional: chocolate coating (recipe above)

Instructions

  • Drain and rinse the beans very well. Blend all ingredients until completely smooth in a food processor for the best texture.
