Ingredients

  • 1 tablespoon fresh rosemary
  • 2 teaspoons fresh thyme
  • 3 ounces goat cheese
  • 1 garlic clove, grated
  • 4 (6-ounce) skinless, boneless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 lemon

Instructions

  1. In a small bowl, combine the chopped rosemary, thyme, grated garlic, and goat cheese until evenly mixed. Set aside.
  2. Cut a lengthwise slit in each chicken breast to create a pocket. Spoon the goat cheese mixture into each pocket, then season the outside of the breasts with salt and pepper.
