Sparkling Dragon Fruit Lemonade

Ingredients
- 2 lemons zested
- 1/4 cup organic cane sugar
- 1 cup dragon fruit in chunks or mashed
- 500 ml tonic water or sparkling water
Instructions

Zest the lemons into a small bowl, taking care to remove only the yellow outer peel.

Add the organic cane sugar to the zest and rub the mixture between your fingers until the sugar is fragrant and lightly colored by the zest. This helps release the lemon oils and infuses the sugar.

Transfer the zested sugar into a larger pitcher or mason jar and pour in the tonic water or sparkling water. Stir gently to dissolve the sugar and combine the flavors.

To serve, fill two glasses with ice. Strain the lemon zest and tonic mixture into the glasses to avoid large pieces of zest while leaving enough room for dragon fruit.

Divide the dragon fruit between the two glasses, using chunks for a textured drink or mashed fruit for a smoother blend. Gently stir and enjoy immediately while sparkling and fresh.
