Your next baking project = Gluten-Free Caramel Pretzel Brownies. Fudgy, chewy gluten-free brownies with caramel sauce and salty pretzels. They’re a texture & flavor wonder!

Drizzling caramel sauce on gluten-free caramel pretzel brownies

Over nearly 15 years of recipe development I’ve learned inspiration can come from anywhere — restaurants, a farmer’s market, a film, the weather, or even snacks. This recipe began with a handful of pretzels. While snacking with my kids I asked myself: what if pretzels went into brownies? Then I added caramel to the idea and the result exceeded my expectations.

These gluten-free caramel pretzel brownies are all about contrast: chewy, fudgy brownie center; gooey caramel pockets; and a crisp, salty pretzel finish. They feel playful and special without being fussy — the perfect over-the-top bake for when you want something memorable.

Below you’ll find the components, tips, and the complete recipe so you can make these brownies at home.

Start With Simple Ingredients

  • A quick caramel sauce. Make a slightly thicker caramel than you might for drizzling so you get gooey pockets in the brownies.
  • Butter. The base for rich, tender brownies.
  • Chocolate chips. We melt some into the batter and fold in extra chips for pockets of molten chocolate.
  • Sugar & brown sugar. The combo gives great texture and helps produce a shiny brownie top.
  • Eggs + an extra yolk. The additional yolk adds fudgy chewiness.
  • Vanilla. Enhances both the chocolate and the caramel notes.
  • Gluten-free 1:1 flour blend. Use a measure-for-measure blend and weigh or scoop-and-level for consistent texture.
  • Unsweetened cocoa powder. I prefer natural cocoa for depth of flavor with caramel.
  • Kosher salt. Balances the sweetness.
  • Certified gluten-free pretzels. They provide the crunchy, salty topping — be sure they’re labeled gluten-free.

Start The Components

  1. Make the caramel sauce. In a medium saucepan combine sugar, corn syrup, and water. Stir just to combine, wipe down stray crystals on the pan sides, then, without stirring, bring to a boil. Boil until the mixture reaches a deep amber color (about 8–10 minutes). Remove from heat and whisk in butter, then cream, vanilla, and salt. Stir until smooth and let cool — the sauce will thicken as it cools. You can make caramel 3–4 days ahead and refrigerate.
  2. Preheat the oven and prep the pan. Preheat to 350°F (175°C). Line an 8-inch square metal pan with parchment paper.
  3. Melt chocolate and butter. In a microwave-safe bowl, combine the butter and 2/3 cup chocolate chips. Heat in 20–30 second bursts, stirring until smooth. Let cool slightly before adding to eggs.
  4. Combine sugars and eggs. In a medium bowl whisk together sugar, brown sugar, eggs, the extra yolk, and vanilla for 2–3 minutes until the mixture lightens and the sugar begins to dissolve — this helps create a glossy top.
  5. Combine chocolate and egg mixture. Gradually mix the melted chocolate into the egg and sugar mixture until smooth.
  6. Add dry ingredients. Fold in the gluten-free flour blend, cocoa powder, and salt until just mostly combined — a few streaks are fine.
  7. Fold in remaining chips. Stir in the second 2/3 cup chocolate chips until distributed through the batter.

Layer & Bake The Brownies

  1. Layer batter and caramel. Spread half the brownie batter in the prepared pan. Drop dollops of cooled caramel (about one-third of the sauce) over the batter. Lightly swirl with the tip of a knife or a toothpick — less is more to keep pockets of caramel.
  2. Top with the rest of the batter. Add the remaining batter, then dot with another third of the caramel and swirl gently.
  3. Add pretzels. Arrange the certified gluten-free pretzels across the top so they sit on the caramel swirls.
  4. Bake and cool. Bake 30–33 minutes, or until the brownies are almost set — they firm as they cool. Allow to cool completely on a wire rack before slicing into 9, 12, or 16 pieces.
  5. Serve. Drizzle or spoon any reserved caramel over the brownies when serving, if desired.

Tricks For Swirling Caramel

  • Use cooled caramel. Warm caramel spreads more; cooled caramel holds little pockets better.
  • Use a small scoop. A cookie scoop or small spoon helps add even dollops.
  • Fewer, larger blobs work best. They create distinct pockets instead of melting away.
  • Swirl lightly. Use a toothpick or thin knife to make a few figure-eight motions — don’t over-swirl.

FAQ + Tips For The Best Brownies

Are pretzels gluten-free? Most traditional pretzels are not. Use certified gluten-free pretzels to keep this recipe safe for gluten-free diets.

Can I use store-bought caramel? Yes, but choose a thick sauce. A runny caramel will dissolve into the batter during baking and won’t create pockets.
