Our smoothie challenge starts next Monday, so here’s a fresh recipe to get you ready. We’ll be enjoying one smoothie every day next week. On Friday I’ll post the shopping list and the seven smoothie recipes we’ll use — simple, healthy and delicious.

This is one of my favorite combinations: banana and berries. It’s creamy, naturally sweet and paired with spinach for extra nutrients. I also add oats for texture and oat milk for a smooth consistency — oat milk is my go-to plant milk. I hope you enjoy it!

Banana Blueberry Smoothie

A creamy banana and blueberry smoothie that works for breakfast, lunch or a quick dinner. Naturally sweet, filling and full of nutrients.

Ingredients

  • 1 banana
  • 1 cup blueberries
  • 1 cup spinach
  • ¼ cup oats
  • 1 cup plant milk of your choice or water*

Instructions

  • Add the banana, blueberries, spinach, oats and plant milk (or water) to a blender. Blend until completely smooth.
  • Taste and, if you like it sweeter, add a natural sweetener such as a date or a pinch of coconut sugar. Serve immediately.

Notes

* In this version we used oat milk.
