Chicken and Avocado Salad Roll-Ups: Easy Low-Carb Lunch Idea

Chicken Avocado Salad Roll Ups make excellent appetizers for parties, a healthy lunch for kids, or a light family dinner—similar to my popular Chicken Avocado Burritos. This is an easy, make-ahead recipe that freezes well.

This recipe is a great way to use leftover cooked or rotisserie chicken. In under 10 minutes you can make a whole batch of these flavorful Chicken Avocado Salad Roll Ups.

They work wonderfully as make-ahead appetizers for a party, but you can also assemble them quickly for unexpected guests. I discovered this idea when friends dropped by last minute: I had tortillas, ripe avocados and leftover chicken on hand, so I combined them into this simple, satisfying snack.

These roll ups are easy to prepare, simple to serve, and very tasty. They’re light, fresh, and versatile—exactly what you want when feeding a crowd or packing lunches.

Instead of mayonnaise, this recipe uses mashed avocado combined with plain Greek yogurt as the binder. The method is straightforward: mix shredded cooked chicken with mashed avocado and Greek yogurt, then season with salt, pepper and garlic powder. Brighten the mix with lime juice and chopped cilantro (or substitute parsley and lemon if you prefer).

You don’t have to follow the ingredient list exactly—this salad is easy to customize. I like to add finely diced red onion, sliced green onion, and shredded Cheddar for extra flavor and texture, but feel free to omit or swap ingredients to suit your tastes.

After the filling is ready, assembly is quick. Spread the chicken-avocado salad onto a tortilla and roll it up tightly. You can slice the roll ups immediately, chill them and slice later (they’re easier to cut when chilled), or wrap individual tortillas in half and freeze for lunches or quick snacks.

Whether served as party appetizers, packed for lunch, or offered as a light dinner, these Chicken Avocado Salad Roll Ups are healthy and adaptable. Omit the Cheddar for a lighter version, or add your favorite herbs and spices for a different flavor profile.

  • 2 cups shredded chicken
  • 1 ripe avocado, mashed
  • 2–4 tablespoons plain Greek yogurt (start with 2 and add more if needed)
  • 1½–2 tablespoons lime juice
  • 2 tablespoons finely diced red onion
  • 2 green onions, sliced
  • Freshly ground black pepper to taste
  • ¼ teaspoon salt (or more to taste)
  • ½ teaspoon garlic powder
  • 1½ tablespoons fresh cilantro or parsley, chopped
  • ½ cup shredded Cheddar cheese (optional)
  • 5–6 tortillas (8–10 inch diameter)

Instructions

  1. Note: This recipe yields enough filling for five 10-inch tortillas or six 8-inch tortillas.
  2. In a large bowl, combine shredded chicken, mashed avocado, Greek yogurt, lime juice, diced red onion, green onion, cilantro (or parsley), salt, pepper, and garlic powder. Stir until evenly blended. Add Cheddar if using.
