Has this ever happened to you? Leftover avocados slowly softening in the fridge?

I’ve eaten my fill of avocado toast and guacamole this week, yet two ripe avocados were still waiting in the fridge. I considered making a classic Green Goddess dressing, only to discover the traditional recipe relies heavily on fresh herbs — which I didn’t have on hand.
Determined to use the avocados, I improvised a creamy dressing that I thought Green Goddess should be: rich, smooth, and bright with citrus. It ends up slightly thick, just enough to cling to cucumber slices and lettuce leaves in a silky, lemon- and lime-kissed coating.
This avocado-based dressing is a great option for outdoor gatherings like a summer barbecue or picnic. Because it contains no mayonnaise, it’s a bit more forgiving if it sits out for a short while — perfect for salads served buffet-style.

Soon I’ll have enough fresh herbs from the garden to make an authentic Green Goddess dressing, but in the meantime this avocado version is a delicious staple. I’ll happily spoon it over salads all summer long.
Creamy Avocado Dressing
1 1/2 cups dressing
Ingredients
- 1 ripe avocado
- 1 clove garlic, peeled and chopped
- 2 tablespoons lime juice
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
- 3–4 tablespoons water (to thin)
Instructions
- Place all ingredients in a food processor or high-speed blender. Process until completely smooth. Add water, one tablespoon at a time, until the dressing reaches a pourable consistency. Taste and adjust seasoning with more salt or lime juice if needed.
