These air-fried mushrooms are made with common button mushrooms and are a quick, easy, healthy appetizer. They’re low-carb and work well for keto diets.
The mushrooms are simply seasoned with soy sauce, pepper, garlic (fresh or powder) and a touch of olive oil or vegan butter. The result is juicy, flavorful mushrooms with crisp edges — ready in minutes.

Mushrooms: Button mushrooms are used here; baby bellas are a great alternative.
Seasoning: Pepper, minced garlic or garlic powder, and soy sauce create a savory glaze.
Garnish: Finish with a squeeze of lemon juice and finely chopped herbs such as cilantro or dill.

Wipe the mushrooms clean with a damp cloth to remove dirt — avoid soaking them so they don’t absorb excess water. Trim stems if needed and cut mushrooms into slices, quarters or halves depending on preference.
Combine extra virgin olive oil or melted vegan butter with minced garlic (or garlic powder), freshly ground pepper and soy sauce. Toss the mushrooms in this mixture so they’re lightly coated, then transfer immediately to the air fryer.

Preheat the air fryer to 180°C (360°F) for about 4 minutes. Arrange the mushrooms in a single layer in the basket so air can circulate evenly.

Air fry for roughly 4–6 minutes at 180°C (360°F) for sliced mushrooms; quarters, halves or whole mushrooms will need a little more time. Thinner slices cook faster and develop crispier edges.
Once cooked, the mushrooms will shrink slightly and develop a tender, juicy interior with nicely browned surfaces. Garnish with lemon juice and chopped cilantro or your choice of herbs.
Healthier version: Omit the oil or butter from the marinade and simply toss mushrooms with soy sauce, garlic and pepper before air frying.

Serve hot as a tasty side dish or appetizer.

Notes
1. Choose fresh, firm mushrooms without brown spots. Baby bellas work well too.
2. Thinner slices cook faster and get crisper edges.
3. Do not soak mushrooms when cleaning; they absorb water and become soggy.
4. For a vegan option use olive oil instead of butter.
5. For a lower-calorie version, skip oil or butter and use just the seasonings with soy sauce.
6. Don’t marinate the mushrooms for too long before air frying or they may become soggy. Toss them and air fry right away.
