Day 207: Discovering an Italian Market Sandwich

They called it a panini at the Italian market, though it was simply a sandwich — a very good one. It was layered with salami, cheese and a mild vegetable spread. That jarred red spread made from roasted peppers, eggplant and spices is far better than mayonnaise; there’s even a spicy version if you like a little heat.

We arrived in Edmonton late in the afternoon and stopped at the market on the way into town. I’m here to cook at the SIP Wine & Food Festival at Capital Ex, and Mike is attending the Indy. Apparently Gene Simmons is in town too, though I doubt he’s in the same hotel as we are.

The sandwich became my dinner, or at least the few bites I managed amid a chaotic run of prep. I was scrambling to get ready while cursing quietly as I discovered the clock radio was set half an hour fast, mislaid my wallet and failed to connect to the internet. To top it off, I managed to lock myself out of my hotel room — perhaps a touch of karma for the hectic night.
