Fluffy Vegan Waffle Recipe — Crispy, Dairy-Free Breakfast

These vegan waffles—made without sugar, eggs, or butter—are a real favorite of mine. This isn’t a simple swap of animal ingredients for plant-based alternatives; the recipe relies entirely on natural, wholesome ingredients. The result is surprisingly delicious and satisfying.

Taste and Occasion

I honestly didn’t expect a healthy waffle recipe to taste this good, since the ingredient list is quite different from a classic waffle batter: no refined sugar, no eggs, no butter, no milk, and no white flour. Compared to traditional waffles, these have a gentle sweetness and a subtle fruity note. The flavor profile is more varied thanks to the ingredients used, making them interesting and pleasant to eat.

These crispy waffles are perfect for vegans, of course, but they’re also ideal as a healthier option for toddlers. They contain no egg, milk, or butter—common allergens for some little ones—and are naturally free of added sugar and sugar substitutes. The use of light wholemeal flour adds a pleasant texture and a more nutritious base.

Ingredients

The batter is simple: fruit puree, a little oil, a plant-based milk, baking powder, and wholemeal flour. The texture and taste won’t match a classic waffle exactly, but I enjoy these for their light fluffiness and mild natural sweetness.

How to make the Vegan Waffles

To prepare these vegan waffles, start by combining the wholemeal flour with baking powder in a bowl. In a separate bowl, whisk together the plant milk, fruit puree, and oil until smooth.

Add the dry ingredients to the wet mixture and stir until you have a smooth batter. Season to taste with vanilla or cinnamon, and if you prefer a sweeter waffle, follow the tips below for sweetening options. Let the batter rest for about 5 minutes to hydrate the flour and allow the baking powder to activate.

Preheat and grease your waffle iron well. Spoon roughly a quarter of the batter into the center, close the iron, and bake until golden and crisp. These waffles are delicious served warm or enjoyed cold.

Top Tip

If you’re avoiding butter, make sure to grease your waffle iron well and consider adding a bit more oil to the batter so the waffles brown nicely and don’t stick.

Servings: 4 waffles

Ingredients

  • 200 grams (1 ¾ cups) wholemeal flour, light
  • 2 teaspoons baking powder, preferably tartaric baking powder
  • 250 milliliters (1 cups) oat milk
  • 80 grams ( cup) fruit puree, preferably apple-banana
  • 2 tablespoons sunflower oil

Instructions

  • Mix the wholemeal flour with the baking powder. In another bowl, whisk the plant milk together with the fruit puree and oil. Combine wet and dry ingredients and stir until smooth. Add vanilla, cinnamon, or other spices to taste. If you prefer a sweeter batter, add a sweetener of your choice. Let the batter rest for about 5 minutes.
  • Preheat and grease the waffle iron. Place about one quarter of the batter in the center, close the iron, and bake until golden and crisp. Serve warm or cold.

Notes

  • Oat milk works well here, but almond, rice, or soy milk can also be used. Cow’s milk is an option if the recipe doesn’t need to be vegan.
  • For the fruit puree, ripe mashed banana or a sugar-free apple-banana puree works best.
  • Try flavoring the batter with cinnamon, lemon zest, poppy seeds, or cocoa for variety.
  • The waffles are mildly sweet by default. If you prefer them sweeter, add about 40 g of cane sugar, coconut sugar, agave, or rice syrup to the batter.
  • To store leftovers, keep the waffles in an airtight container such as a Tupperware.

Ingredient substitutions

If you’d like to swap ingredients, use similar plant-based milks or a different fruit puree. Adjust oil or sweetener to taste.

Variations

If you prefer not to use banana, applesauce is an excellent alternative. Whether you’re preparing egg- and sugar-free waffles for baby-led weaning or making a snack for yourself, this recipe is adaptable. The light wholemeal flour keeps the waffles tender while adding fiber and a pleasant texture.
