Fresh Herb Salt Recipe: How to Make Flavorful Seasoning at Home

A few years ago, while on vacation in Portland, Oregon, I discovered a small jar of fresh herb salt. Before that trip I hadn’t realized how simply fresh herbs could be preserved by mixing them with salt. Since then I’ve bought many jars — often as gifts — and recently decided to try making my own. It’s easy and rewarding. Here’s a straightforward method you can follow.

Feel free to use any combination of herbs you prefer. This herb salt works well on meats, vegetables, pasta, and more — it’s versatile and full of fresh flavor.

Ingredients  

  • 2 cloves garlic peeled
  • 2 cups fresh herbs lightly packed — I like a mix of oregano, thyme, and sage
  • 1 cup coarse sea salt
  • 1 teaspoon freshly ground black pepper

Instructions 

  • Start with a food processor. While it’s running, add the garlic through the chute to mince it. Then add the fresh herbs to the bowl and process until finely chopped, about 30 seconds.
  • In a medium bowl, combine the chopped herbs and garlic with the coarse sea salt and freshly ground black pepper. Whisk well to blend everything evenly.
  • Transfer the herb salt to an airtight container and store it in a cool, dry place. It keeps for several weeks and makes a thoughtful homemade gift.
