Ingredients

  • 1 lb chicken breast or thigh, boneless & skinless, cut into 2-inch pieces
  • 1 egg

Flour mixture

  • ¼ cup almond flour
  • ¼ cup tapioca flour
  • ¼ cup brown rice flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)

Instructions

  1. Heat the oven to 400°F (200°C).
  2. Melt 1/4 cup of your chosen cooking oil (refined coconut oil or avocado oil recommended) in a large oven-safe skillet over medium-high heat.
  3. Beat the egg in a shallow bowl and set aside.
  4. On a large plate or shallow pan, combine the almond flour, tapioca flour, brown rice flour, salt, pepper, and paprika. Place the mixture to one side with room to coat the chicken.
  5. Dip each chicken piece into the beaten egg, letting excess drip off.
  6. Coat each egg-washed chicken piece thoroughly in the flour mixture and set the coated pieces in a pile on the plate. Continue until all pieces are coated.
  7. Add the breaded chicken pieces to the hot skillet, leaving space between each piece so they can crisp properly.
