Ingredients

  • 1 cup Eggnog
  • 4 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/4 teaspoon rum extract (optional)
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 loaf gluten free bread (about 12–16 slices)

Instructions

  1. In a shallow bowl or container, whisk together the eggnog, eggs, vanilla extract, almond extract, rum extract (if using), cinnamon, and nutmeg until combined.
  2. Heat a skillet or griddle over medium-low heat. Add a little butter or non-stick spray if needed.
  3. Dip each slice of gluten free bread into the egg mixture, allowing it to soak briefly. Let excess drip off, then place on the hot griddle.
  4. Cook until the underside is golden brown, then flip and cook until the second side is golden. Transfer to a plate and keep warm while you finish the rest.
  5. Serve warm with pure maple syrup, fresh berries, and whipped cream if desired.

Notes

  • This gluten free Eggnog French Toast freezes well. Once cooled, freeze on a sheet pan, then transfer slices to a freezer bag and reheat in the toaster when needed.
