It isn’t officially grilling season until the first brat hits the grill. These were the very first things I grilled this year, and to kick things off I made a special relish: Green Olive Dog Sauce with Bacon, Horseradish & Mustard. It’s bold, creamy, and a little bit unexpected — just the right topping for a juicy bratwurst.
This sauce combines some favorite flavors: pimiento-stuffed green olives, crisp smoky bacon, and red onion folded into a creamy base flavored with horseradish and spicy brown mustard. The result is a relish that adds texture and bright, savory notes without drowning out the brat’s flavor.
Even though the ingredients are assertive, they complement the sausage instead of overpowering it. The combination of creamy, tangy, and smoky elements elevated the brat so much that ordinary mustard and onions felt almost inadequate by comparison.

Green Olive Dog Sauce with Bacon, Horseradish & Mustard
Ingredients
- 1 Tbl. heavy mayo such as Hellmann’s or Dukes
- 1/2 Tbl. sour cream
- 1/2 Tbl. + 1 tsp. spicy brown mustard
- 2 tsp. extra hot jarred horseradish
- 1 Tbl. green olives with pimientos
- 1 Tbl. red onions
- 1 Tbl. real bacon bits (not imitation)
- 1/18 tsp. garlic powder
