Ingredients

  • cup creamy peanut butter
  • 1 cup old fashioned rolled oats or quick oats (for smoother texture) plus extra for rolling
  • 1 ½ TBSP honey
  • tsp vanilla
  • ¼ cup mini chocolate chips plus extra for rolling
  • ¼-⅓ cup ground flax seed

Instructions

  • Mix all ingredients in a bowl until well combined.
  • Cover and chill in the refrigerator for 20–30 minutes.
  • Roll into approximately 12 bite-sized balls. To prevent sticking, coat your hands lightly with coconut or avocado oil before rolling. Squeezing the mixture before shaping helps too.
  • Place extra oats and chocolate chips (or shredded coconut) on a cutting board and roll the balls in the mixture to coat. Roll again briefly so the toppings set.
  • Store the energy bites in a lidded container in the fridge for up to one week.

Notes

If you like coconut, roll some or all of the bites in shredded coconut for a tropical twist. The recipe is flexible — try different mix-ins to suit your taste.
