  • ½ cup Persian cucumber, sliced

  • 3 ounces feta (or vegan feta)
  • ¼ cup chopped parsley
  • 2 tablespoons chives, finely chopped (optional)
  • 1 tablespoon basil, ribboned (optional)
  • ¼–½ cup chopped marinated red onions (optional)

  • 4 salmon filets (6–8 ounces each)
