Peanut Butter & Banana Breakfast Bars

If mornings are rushed, these Peanut Butter & Banana Breakfast Bars are ideal to prepare at the weekend and enjoy all week. They use only six simple ingredients and are naturally sweetened with banana, making them a healthier alternative to many shop-bought breakfast bars or muffins.

Store the bars in the fridge for up to two days and reheat briefly in the microwave if you prefer them warm. They also freeze well — freeze individual squares and defrost overnight in the fridge or at room temperature for a couple of hours. Freezing instructions are provided in the notes below.

Each square works out to approximately 175 calories without toppings. They’re delicious plain or topped with an extra smear of peanut butter and banana slices, and pair nicely with Greek yogurt and berries for a more substantial breakfast.

Description

Soft oat bars with peanut butter and banana — simple to make and perfect for batch-cooking. With just six ingredients, these bars are a convenient, nutritious start to your day.


Ingredients


Scale

  • 200g porridge oats
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • 2 ripe bananas, mashed
  • 400ml semi-skimmed milk
  • 75g peanut butter

Instructions

  1. Preheat the oven to 180°C fan and line a square baking dish or brownie tin with parchment paper.
  2. Combine the oats, cinnamon and baking powder in a large bowl and mix thoroughly.
  3. In a jug or separate bowl, whisk together the mashed banana, milk and peanut butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until evenly combined.
  5. Transfer the mixture to the lined dish and bake for 30–35 minutes, until the top is golden and set.
  6. Let the baked tray cool for a few minutes, then lift out using the parchment. Allow to cool a little more before cutting into 9 squares.

Notes

Store the bars in the fridge for up to 2 days. Reheat briefly in the microwave or enjoy cold. For freezing, place individual squares in an airtight container or freezer bag; defrost overnight in the fridge or at room temperature for a couple of hours.

Use 100% peanut butter with no added sugar for the best flavour and nutrition.
