This Teriyaki Ramen Noodles recipe is a quick, flavorful weeknight dinner made with ramen, broccoli, sugar snap peas, mushrooms, and a homemade teriyaki sauce.

This vegetable-packed teriyaki ramen comes together quickly and is coated in a sweet, sticky homemade teriyaki sauce for a takeout-style flavor you can make at home.
It’s one of our favorite ramen noodle dishes and pairs well with other simple recipes like Sesame Garlic Ramen or Asian Mushroom Ramen.

How to make teriyaki noodles
Step 1: Prep the vegetables — slice the mushrooms, chop the broccoli into florets, trim the sugar snap peas, and slice the green onions.
Make the homemade teriyaki sauce
Step 2: Prepare a batch of homemade teriyaki sauce. It only takes about 15 minutes and typically includes brown sugar, orange juice, garlic, and fresh ginger for a balanced sweet and savory sauce.

Cooking the vegetables
Step 3: Heat sesame oil in a large skillet and add the broccoli florets, sugar snap peas, sliced mushrooms, and green onions.
Cook over medium-high heat for about 15–20 minutes, until the mushrooms release their liquid and everything is tender-crisp. During the last 10 minutes, prepare the ramen noodles according to the package directions and discard the seasoning packets.

Adding the sauce and noodles
Step 4: When the vegetables are cooked, add the drained ramen noodles and the teriyaki sauce to the skillet. Toss everything together until the noodles and vegetables are evenly coated. Taste and adjust seasoning with salt or a splash of soy sauce if needed.

Serving teriyaki noodles
Serve the teriyaki noodles as they are, or add a drizzle of sweet chili sauce for a spicy-sweet finish. The dish is mildly sweet and brightened by fresh garlic and ginger in the sauce.

- 3 blocks ramen noodles, flavor packets discarded
- 8 oz baby bella mushrooms, sliced
- 3 cups broccoli florets

- Cook over medium-high heat for 15–20 minutes, until mushrooms release their liquid and vegetables are tender-crisp.
- During the last 10 minutes, cook the ramen noodles according to package instructions and discard the flavor packets.
- Add the cooked ramen and teriyaki sauce to the skillet and toss to combine.
- Season with salt or soy sauce to taste if desired.
