If you enjoy festive brunches, this Gluten Free Eggnog French Toast is a simple, make-ahead option that shines during the busy holiday season. It’s quick to prepare and works equally well for breakfast, brunch, or even breakfast-for-dinner.
This version uses eggnog in the custard for warm seasonal flavor. Serve with fresh fruit, eggs, and bacon or sausage for a complete meal, and top with pure maple syrup and whipped cream if you like.

I had a large bottle of eggnog leftover from testing other holiday recipes, so I used some to make and photograph this French toast. It’s an easy crowd-pleaser and a great way to use extra eggnog. If you prefer dairy-free, swap in a non-dairy eggnog instead.

This French toast pairs nicely with quiches, bacon-wrapped bites, or homemade breakfast sausage. Add a fruit salad or fresh berries on the side for brightness. It reheats well and can be frozen for quick breakfasts later.

Gluten Free Eggnog French Toast
Ingredients
- 1 cup Eggnog
- 4 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 1/4 teaspoon rum extract (optional)
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 loaf gluten free bread (about 12–16 slices)
Instructions
- In a shallow bowl or container, whisk together the eggnog, eggs, vanilla extract, almond extract, rum extract (if using), cinnamon, and nutmeg until combined.
- Heat a skillet or griddle over medium-low heat. Add a little butter or non-stick spray if needed.
- Dip each slice of gluten free bread into the egg mixture, allowing it to soak briefly. Let excess drip off, then place on the hot griddle.
- Cook until the underside is golden brown, then flip and cook until the second side is golden. Transfer to a plate and keep warm while you finish the rest.
- Serve warm with pure maple syrup, fresh berries, and whipped cream if desired.
Notes
- This gluten free Eggnog French Toast freezes well. Once cooled, freeze on a sheet pan, then transfer slices to a freezer bag and reheat in the toaster when needed.
